Brined Pork Chops

Ingredients

boneless pork loin cut into 1.5" chops

4 cups water

3 tablespoons kosher or coarse seasalt

orange peel

garlic

lemongrass

black peppercorns

EVOO

Description

Be sure to brine & refrigerate the pork overnight before grilling.

Directions

Bring water, salt, orange peel, garlic, lemongrass & peppercorns to a boil. Cool to room temperature. Add 1 cup ice to chill completely.

Place pork in a large zip-lok bag & pour in the brine. Seal & refrigerate overnight.


Bring to room temperature to cook. Pat dry with paper towels & lightly rub both sides with oil.
Grill over Direct Medium heat 8-10 minutes, turning once. Let rest for 3-5 minutes before serving.
